vennison jerky........

meat.......a leg or 3 or what ever, back, ribs ......rump of vennison (or pig/ goat/ beef )

 

place in oven , get it hot as it will go, after 15/20 mins turn down low for 6-8 hrs,( go for a shoot/ walk/ take the missus for a beer)

 

just let the meat almost dry out , leaving it well cooked through out

 

.... some will be crisp, around the edges too ! .........

 

take out the meat, cut into 2-3" stips , approx 1/4 " wide,. (keeping the over door closed & warm)

 

place in good sized bowl,

 

pour in lashings of worsterster sauce, soy sauce, & a splash of tabasco..topping up with water ,to cover it all.

 

place lid on & put back in oven for 5 mins/or leave over night, let the sauces soak..

 

take out stips of meat & chew till ya hearts content.. enjoy....... :oops:

 

it will keep for weeks too.... :good:
