Not advisable to hang pigeon for too long, like any meat it must be keep cold, pigeon can go off very quickly and in the summer months can go off during the days shooting in the heat (if we get any), birds that have been feeding on rape with it in their crop will also be tainted very quickly, hanging does nothing to add to the taste in my opinion. best to keep shot birds as cool as possible and away from flies , a wet hessian sack in the summer helps. prepare them as soon as you can and keep in the fridge or freezer.
