larder requirements

Hi guys,can anyone tell me what is required for a homemade larder,im building some block sheds & the size of the larder will be 7ft x 14ft with a stainless steel sink.What else would i need & who would i need to notify.

Lots of things have changed with regards to food storage and production over the last few years and it's wise to try and do things by the book.

 

Under EU food hygene regulations every person who has a chiller or larder for the purpose of storing/prepairing game/meat, either for sale to a registered game dealer or just for personal consumption is required to register with their local council as a primary food producer. This even applies to all those guys who have Coke fridge convertions for storing deer!! :unsure:

 

I have a large chiller which I store Pigeons and Game in for the days in between game dealer collections and also Roe Deer which are used for personal consumption and I was required to register this chiller with Fife council. This is also the case even for small scale personal use.

 

It doesn't cost anything to do so.

Andy,

 

It would be best to contact BASC as to the latest layout advice. I know all the usual stuff like clean water supply, covered drain, fly lights and protection. I would advise tiles on the floor and wet wall sheeting on the walls. There also needs to be plastic flap partitioning to separate storage of feather from fur.
