A gas operated S/A is operated by tapping some of the expanding gas from the cartridge being fired (through vent holes in the barrel), and redirecting this gas to recycle the action.

 

Other types of S/A use recoil operation (the old "equal and opposite" effect of the shot being propelled) or inertia.

Gas operated guns generally require more cleaning, but in my experience handle a better variety of cartridges than recoil operated ones. I have no knowledge of the new inertia operated guns offered by benelli, but they seem to have a good following.

 

If you straight up want my recommendation, then go for a second hand Beretta AL391 Urika. Yes, it is gas operated and therefore requires a bit more effort to clean (especially if you are as anally retentive about such things as I am), but it will cycle pretty much anything and is about the best s/a on the market. You could go upmarket and get an Urika 2, Teknys or Xtrema (all from Beretta), but for my money if you just want a straight pigeon/clay gun then the standard Urika is damn hard to beat. I have one and would not part with it.
