Venison Salami

Im thinkig of curing myself some venison salami ready for christmas

I already have sloe gin and bramble vodka and I made truffles from the vodka-soaked blackberies.

I would love to top it all off with some bambi-salami!

 

Does anybody have any particularly good methods or recipes?

I know how to make basic salami but I have never actually done it and any advice would be much appreciated :hmm:
