ollie Posted January 5, 2010 Report Share Posted January 5, 2010 (edited) Try this one mate, it has quite a bit of veg but it is really simple to make and is very tasty. Ingredients 100g Streaky Bacon 2 Rabbits jointed (I cut of the loin and take the legs from the carcass) 4 Celery Sticks (Chopped) 1 large Leek (or 2 small 1's sliced) 200g Carrots (Sliced) Mixture of Thyme, Garlic & Rosemary 2tbsp Flour (I generally add as much as I need depending on the consistency you like the casserole) 1 Pint Stock (I use Chicken) Method Fry bacon in casserole dish, add rabbit joints until sealed. Add celery, leeks, carrots and seasoning. Sprinkle in flour and stir well. Cook all this for a few mins then add stock gradually and bring to the boil. Cover and cook in the oven @ 170oC for 90mins or until the meat is tender. Serve with a few spuds. As I said I would generally leave the legs intact and lift them with my hands to eat. Try and remove the outer synue from the loin before cooking as it can make the meat very tough.
