Tasted the blackcurrant vodka yesterday as I wanted to check the sugar levels. Just about right I reckon and it's maturing into a lovely drink. I'm very pleased with it.

Here's what I did:

3/4 lb black currants

Bottle vodka (Russian Standard - better than I would have used but it was all I had and I was impatient)

About 6 tbs soft brown sugar

Mix it up and seal it in a kilner jar or similar. I stirred it every day for the first two weeks. It's now sitting in the garage with the fruit in. Will bottle it at Xmas I think.

I have just done this years batch of bramble whisky. not added much sugar as i want it on the dry side.

3/4lb blackberries, washed and drained.

1 liter of cheap whiskey

2 table spoons of sugar.

same thing as you, in a kilner and shake daily.

dont thought away the whisky bottle as once the liqueur has been decanted off in 6 months time, it can go back into the bottle.

if i want to speed things up i just get the metal spud masher unto the kilner. i had to do this today to the cherry brandy as it wasn't taking on the cherry to well. still tastes good though.

go on the dry side, if its to sweet then it may also be to thick but you can nip it down with more gin if need be so all will not be lost.

i waited as long as i could before picking the sloes but the frosts didnt really happen so i picked in november and then pricked with a fork. i have bucket loads around me that no one picks. wonder if there is a market for them.lol.
