Dandelion Leaves

Plenty more food to be had out and about - today's ingredient is Dandelion leaves (they're great in salads).

This recipe is fantastic, a friend gave it to me a while ago - i also add cooked smoked Pancetta (substitute for cooked chopped bacon).

I tend to make it with Gruyère not Provolone as it's one of my favourite cheeses.

You can substitute the Dandelion with Spinach if you're not feeling adventurous.

Hard work removing all the green from the flower heads :yes:. In my wisdom I decided if I was going to make 1 gallon I may as well do 4 :oops:

 

When it was ready (6 months, I think) it was almost indistinguishable from a cheap German Hock :hmm:

 

Now I stick to berries and fruits :good:
