Seriously, it's simple. Chuck it in a casserole dish with 50/50 red wine and stock, plus celery, carrot, potato, and cook nice and slow with the lid on. Whatever we get gets thrown in a pan with water or wine, onions and a stock cube, leave on a low heat for a day or stick in slow cookery...
