Nettle beer

I'm brewing some nettle beer at the moment but all of the info I've found says to leave it brewing for 3 days then transfer to bottles. I'm concerned about making bottle bombs if I do this but equally I'm concerned that if I leave it to ferment out and then prime the bottles it be too dry.

 

Also they recommended bread yeast, which I have used, but is there a good reason for this?

 

Any tips would be very much appreciated.

Sounds like what your making there is the soft drink version more of a variaton on traditional ginger beer than anything else.

Plastic bottles cope well with that sort of brew but swing top bottles are much better and will vent off excess co2.

I may ferment completely and prime the bottles then, and if it's too dry I can add lemonade.
