Removing breasts

I heard from quite a reliable source that you are able to remove pigeon breast from said pigeon by standing on its wings face up and pulling its legs. I'm not familiar with this as I usually pull back the skin and cut the breast out. Does anyone else know how to do this or any other ways of doing it???

Standing on Wings only works with the bigger birds in my experience.

 

Lay the pheasant with its back to the ground. Spread its wings and put your foot as close to the body as possible whilst still stepping on the wing. Grab the legs and pull up.

I nearly always crown my pigeons and the fastest way I have found is in three steps...and do them in batches....

 

Pigeon breast away from you and rotate the wings anticlockwise till you hear it snap at the collar bone...then pull off

 

Next get a sharp knife and make a small hole just below the breast bone into the body cavaity ....

 

put thumb in the hole under the breast and then one finger either side of the breast ....while pulling up with your thumb push down with your other two fingers.....while holding the bird in your other hand pulling down

The breast should come clean off with no skin or feathers on it

Thats a good way to do it never seen it that way before . Bet his bin smells tho

i tend to do mine on the farm ,if it only a few i leave the rest of the body for the fox ,if its a lot i leave the rest of the body in the farm fire ,so there's no rotting body's everywhere always carry a handful of latex gloves and some shopping bags to carry breast home ,you can go from the neck end as well ,pull off wings and then bend neck back ,stick both thumbs down inside the bird and pull back the chest bone ,be careful as the spine can be sharp ;-)
