My rottie puts them in the oven and over cooks so we can have peking duck and pancakes. 'kin excellent and I don't have to give the local chinese any of my hard earned beer tokens I am sure you will find many reciepe's in the relevant PW section and if not ask NTTF. pin Posted December 30, 2006 Report Share Posted December 30, 2006 Score the fat and season, fry skin side down in some oil until you can see the fat running and the skin crisping up. Then turn over and season salt and pepper again. 3/4 mins then into a hot oven for 6-8 minutes. Meanwhile wipe the pan, halve 4 jucy plums and fry cut side down in a little oil for a few minutes, then throw in some brown sugar to start caramelising. Right at the end add a few tsp of water to make a small quantity of syrup.
