pigeon satays

prepared the last couple of lots of pigeon this way and it went down a storm, even the wife liked it!!

each breast will make 1 satay.

 

step 1 tenderise breast by flattening it with a meat tenderiser or rolling pin etc. best done with cling film over breast to avoid mess.

 

step 2 you should now have a breast approx twice as long and wide as before. slice longways to give three strips.

 

step3 marinate overnight in jar of satay sauce (i used sharwoods satay cook in stuff) 1 jar does about 30 breasts (15 birds)

 

step 4 thread onto bamboo kebab sticks (approx 30)

 

step 5 cook on bbq for about 5 mins

 

this is pretty good and loosens up the meat so its not quite so dense. i guess it could be done with different types of sauce but i havnt tried yet.
