Helix Pomatia (Snails)

I've got hold of eight Helix Pomatia (Roman snails, the big edible ones). I'm currently purging their digestive system as recommended by Hugh Fearnley-Watsisname. I've eaten snails in restaurants, and abroad, but never tried to cook them myself.

 

Anybody ever had a go? Any success? Any recipes, tips etc?

i reckon you should do them in a couple of finely diced shalotts and white for for a few minutes. or just steam them.

Update.

 

After purging for 4 days, (no food, plenty of fresh water) I boiled them in heavily salted water for 10 minutes. After allowing them to cool, I removed them from their shells with a metal skewer, quite easy with a twisting action of the wrist. A good **** of butter in the skillet, with a couple of cloves of garlic and a pinch of dried mixed herbs. Got it foamiing hot, and tossed the snails in. Cooked for about 5 minutes, stirring all the time. Served up with warm olive bread (sorry to say - shopbought).

Tasted like dog ****, with the texture of an old Dunlop. Never again.
