Guest Mr Pieman
I tend to use pork belly with mine, as it stops them drying out as you rightfully suspect. The actual recipe is really personal choice of seasonings etc. Cheers  PP
millo2
Could you not just use a traditional method and substitute the meat? Sorry but I do not know much about it, but would like to know how too.
Hammergun
Minced pork rind with the fat underneath does for the fat, or you can use a pig's head and / or trotters. You also need to add some rusk to bind it all together.
Guest Mr Pieman
Here's a recipe I got from a previous post by NTTF   VENISON BREAKFAST SAUSAGE 1 lb. deer or big game, ground 8 oz. lean bacon, sm. pieces 3/4 tsp. salt 1 tsp. sage 1/2 tsp. ginger 1/4 tsp. Pepper Grind above; or mix well. Shape into thin patties and fry until browned and done. Makes 1 1/2 pound sausage. Can also be frozen uncooked.
