Rabbit Curry

Anyone else do rabbit curry ?, another great way to use rabbit !!.

 

Use the saddles and meat from the back legs, fry up some onions in vegetable oil, in a seperate pan put in couple of tablespoons of curry powder (hot or meduim as you prefer) heat up the oil and powder and mix together. Put the bunny meat in, cubed up to around 1" cubes and stir it around until it browns all over. This will seal it well before cooking further. Tip in a tin of chopped italian tomatoes, some fresh coriander, one chopped and one whole chilli, the lightly fried onions and cook slowly (I usually put the whole lot in a saucapan at this stage after starting it off in a frying pan). Cook it for an hour like this then chuck in two or three big tablespoons of natural yoghurt. Cook enough for 2 days as the curry second day round is always tastier once reheated IMHO.

 

Add whichever rice lights your candle and you've got a prime low fat dinner.

 

Can't claim this recipe as my own, girlfriend showed me how to do it. Hope you like it if you try it !!!
