henry d Posted February 25, 2009 Report Share Posted February 25, 2009 Makes about 6+ portions 1.5kg Butternut squash 3 x Granny smiths apples 1 large onion 2 x cloves garlic 1.5ltrs chicken stock(3 cubes & 1.5ltrs water) 2 x heaped tsp of curry powder 1 x pot of single cream(size depends on how creamy you like the soup) **** of butter and a splash of oil salt & pepper to taste 1.Sweat the chopped onions and when half done add the crushed garlic and sweat for another 5 minutes or so, but don`t brown. 2.Add the hot stock to the pan and then the peeled, cubed and de-seeded squash and the peeled cored and chopped apple. 3.Bring to the simmer until the apple and squash are tender then add the curry powder, simmer for a minute more then taste. Add more if so desired and season to taste. 4.Blitz with a stick blender or in a food processor then , taste and adjust spice/seasoning if necessary, add the cream as to your taste. Enjoy !
