hodge911 Posted September 5, 2008 Report Share Posted September 5, 2008 sorry! you have probably read loads of these but this is one i tried a couple of nights ago both me and my mrs [ this was her first ever time of eating rabbit] loved it you need; 1 or 2 rabbits depends on size 2x medium sized onions cut into quaters 2x veg oxo cubes mushrooms frozen peas 1x tinned carrots ready made puff pastry bisto gravy grans salt/pepper.to taste soaked the rabbit overnight in quite a strong salt solution cut into 3 pieces [rear legs,saddle,forend] and rinsed in clean water placed into suitable pan along with 2x veg oxo cubes 2x medium sized onions cut into quarters bring to boil reduce heat and simmer gently for approx 2hrs [or until meat comes away from the bone easily] once at this stage remove the rabbit and strip all meat off bones set aside. pour the cooking stock through a sive and keep onions,return approx half the stock to pan and return to the boil add gravy grans till gravy meets your required thickness then add all other ingediants and simmer for 2/3 mins place into your preferred dish [i use individual sized ones] cover with pastry and cook until pastry is golden brown serve with boiled new potatoes and a selection of veges of your choice Quote Link to comment Share on other sites More sharing options...
