Fresh pigeon washed and brine soaked for 24 hours dice pigeon up nice and chunky add a teaspoon of ground white pepper per 8 breasts (4 pigeons) add 2 drops of Angostura bitters per breast add a little oil work this all together and marinade for 24 hours wok cook for very little time .... about 3 minutes or until middle of largest chunk is just pink inside Serve with a nice mixed egg fried rice Quote Link to comment Share on other sites More sharing options...

banjobill Posted December 24, 2009 Report Share Posted December 24, 2009 Pigeon marinade has gotta include Port and Soy sauce, mixed with lemon and garlic its ledgendary! BB Oh and the breast should be sealed in a hot wok and then cooked at a lower temp. untill fully cooked then dressed with the marinade on lightly toasted toast. Have to say it's hard to beat a long vodka - 50ml vodka, dash of lime, fill up with lemonade and mix with a few drops of Angostura - very refreshing.
