Throw in 2 sliced onions. 1 red and 1 green pepper. 2 sliced courgettes. 1 sliced,salted(for half hour) then rinsed aubergine. 1 tin of chopped tomatoes and 2 chopped garlic cloves. Add a big glug of olive oil and black pepper. I add a squirt of tomato puree. Cook it on medium heat and stir a bit until its all soft. Come to think of it I saute the veg with the oil and garlic before adding the tomatoes and then cooking it down. I still cant think of much which is as easy and tasty to cook though. Axe Posted January 19, 2010 Report Share Posted January 19, 2010 I still cant think of much which is as easy and tasty to cook though Can I offer you this recipe then: 4 Pork Chops off the bone 3-4 Med Potatoes peeled & Sliced thinly 400g Tin Chopped Tomatoes 1 Lg Onion Sliced 2 Celery Stalks Sliced 2 Tsp Sugar 2 Tsp Worcestershire Sauce 1 Tbls Flour Salt & Pepper 50oz Butter Preheat oven to 180C. Season flour with salt & pepper and coat the chops well. Fry in a pan with a little of the butter on a medium heat until golden on both sides and place in the bottom of a suitable casserole dish. In the remaining butter, add the sliced onions and celery and soften. Add the tinned tomatoes, sugar and Worcestershire sauce and mix. Pour over the chops spreading evenly. Top with the thinly sliced potatoes and dot with remaining butter. Place lid on and bake for an hour. Remove lid and bake for another 30 mins. Serve with green beans. I reckon this would work well with Rabbit. It also works really well with a cheese and bread crust as opposed to potatoes and with lamb instead of pork. Simply break up stale bread into small chunks and mix with an equal amount of cheese, sprinkle on top and cook as per recipe above. Its a staple in our house.
