adam1 Posted January 19, 2010 Report Share Posted January 19, 2010 I,ve just got a new permission with plenty of hares, having never delt with one before I would like to know how to deal with them properly. Firstly I presume you de-pee them right away like rabbit, but then how do you hang them as I've read a couple of conflicting things, do you hang with the guts still in or do you gut then hang? I presume time span is down to personal taste and tempreture? Hang by back feet? Once its been hung would you soak in salt water like rabbit or is hanging doing the same job? henry d Posted January 22, 2010 Report Share Posted January 22, 2010 If it isn`t too badly shot, give it from 3 days to a week hanging by the back legs, ungutted, with a plastic cup around it`s face to catch the blood. Then skin first and retain the blood from inside along with the liver, heart and kidneys and make a soup with the meat and offal and lots of celery, carrots and onions. Warm the blood in another pan and add to the soup when the meat is tender Sounds gross but is a lovely strong flovoured soup. Or, gut and skin within a day and have the saddle wrapped in streaky bacon as a meal for two and the legs I like smothered in a 50/50 mix of butter and mild grainy mustard and then roasted.
