Game Meatloaf

I was going to do a BBQ a couple of weekends back but due to work and the weather it got called off.

 

I had planned to serve up game burgers, but when the weather went haywire last week it just didnt feel like 'burger and salad' time, so I ended up filling up a greased loaf tin and baking it in the oven.

 

Here is the recipe:

 

750g rabbit meat, minced

750g pigeon breast, minced

500g pork belly, minced

2 large onions, chopped finely

2 cloves of garlic, squished

5 sage leaves

2 inch sprig of rosemary, stripped

1.5-2 tbsp salt (or to taste)

lots of cracked black pepper

spash of port.

 

If the rabbits had been fresh, the livers and kidneys would have been chopped fine and gone in. Likewise, this would be a good way to use up any other game meat that is kicking about in the freezer.

 

Fry onions very gently in oil or butter until softened but not coloured.

 

Chop sage leaves and rosemary finely.

 

Combine all ingredients thoroughly in a bowl. Fry a small amount and taste for seasoning. Add salt and pepper if required.

 

Grease a loaf tin with butter or margarine. Fill with mixture and cover the top with foil. Leave a pleat or fold in the top of the foil as the mixture will expand as it cooks.

 

Cook in a Bain Marie for 1.5 hours at gas 4-5. Check it is piping hot in the middle before turning out and serving in thick slices.

 

We had it with mash and veggies, and it went down a treat. This is a good one for using up those bunnies and pigeons lurking at the bottom of the freezer at this time of year.
