New Mexico Green CHilli Stew

I've copied this receipe from a biking forum that I frequent. I have made various versions of this and must say that it is great for the spicy food lover I've posted this because you may be also thinking that a bit of pigeon may be added also

this is the reciepe verbatum:

 

First discovered this stew in Tucumcari, New Mexico, while travelling Route 66 last year. I had never heard of it before, but green chili, or indeed, any chili creates a bit of an automated response in me. Usually along the lines of "I'll have it". Had four or five bowls of it the night I discovered it, and continued sampling anywhere else I came across it, Albuquerque was also good. Asked for the recipe only to be told "You won't be able to make it in Ireland because you can't get the green chilis". I eventually came across a recipe and made it recently. It works and is as good as I remember.

 

*** Health Warning. If you don't like spicy food, don't try this at home. ***

 

Fry three or four strips of bacon in a heavy pan. Remove and reserve crisp bacon.

Brown 1 lb cubed pork, beef, or other meat in the bacon fat. (I think the pork is best

 

Add:

 

5 cloves garlic, diced

2 onions, chopped

Saute around until onion browns a bit.

 

Add:

 

1 can stale beer (I don't bother with this. Personal choice)

5 bay leaves

dash of vinegar

1/2 to 1 tsp. cumin seed

1 to 2 Tbl. leaf oregano

freshly ground black pepper to taste

water to cover

 

Simmer until meat is getting tender, probably an hour or two. (I give it two)

 

Then add:

 

3 potatoes, cubed

salt to taste, tsp sugar, enough water or stock to cover well

 

Simmer until potatoes are beginning to get a bit tender. Stir occasionally, but gently so that you don't break up the potatoes. When potatoes are getting tender, add:

 

a cup or two of roasted and peeled green chile cut into rather large pieces. (If you can get fresh Jalapenos, great. If not use what you can get, jars of Old El Paso etc. work well)

 

Simmer a few more minutes until the potatoes are nice and tender. Green chile stew is served in bowls along with freshly heated flour tortillas.

 

Garnish with the bacon (if you haven't already eaten it in a bacon buttie)

 

Salivating just thinking about it. Must make another pot this evening.

Sounds good. I want to do route 66 from end to end

 

Snap, preferably on the biggest Harley I can hire, complete with a lacquered, matt black peanut helmet, shades and jeans. For safety reasons (and to keep her happy) our lass and the kids would be following behind in a massive SUV. Been a dream for the last 10 years or so for when I leave the army. I'm also planning to gorge myself on every ***-burning food group I can find.

me too!!! Well, I've not planned what helmet I'm wearing yet, but the harley and food definitely. My mrs and kids can jump in with yours and we'll easy rider it.

Another believer! Everytime I mention it the lads look at me like I'm deranged. Long, straight roads, devoid of traffic and people with a backdrop vista of cactii, towering sandstone edifices and a warm desert wind and the knowledge of some authentic chilli and some cold beers in a remote motel complete with 'Have a nice day'. Pure heaven. 542 days to push and counting.

 

Edited to add - if anyone has an authentic Texas chilli recipe (the really thick, dark stuff you eat with crumbled Saltine crackers) can you post it please?
