Though I don't have one, I think you should be breaking the wing at the shoulder as well, then there is no resistance from the wing to flap; They probably won't come off then.

 

Easily done, hold the bird from the body with one hand, with the other, put your index finger underneath the wing half way up the first main bone of the wing and using your thumb push the top of the wing downwards right at the shoulder, and you will feel it snap away.
