Having never made one before does anyone have an easy and foolproof recipie? If it is not too big you can put herbs in the body, loosely wrap in foil and bake in the oven. If larger, then fillet it and cook like any other white fish. Had a fillet last night and cant say I was impressed, which is a shame as I really wanted to like it, but it just seemed bland. It was fairly meaty though so I imagine it would be nice in a fish pie or fishcakes. I just gave it a quick fry and served it with butterd spinach. I wouldnt bother again though.
