old fashioned bread pudding

16oz good quality brown bread

1 pint milk

16oz raisins

4oz butter, melted

2 large eggs beaten

6oz dark molases sugar

6 rounded teaspoons mixed spice

2 tablespoons demerara sugar

small amount nutmeg for top.

 

method

 

cut the bread into small one inch peices, place in a large bowl and add the milk, give this a good stir and leave soak for at least 30 minutes next add melted butter, sugar, mixed spice, and beaten eggs, with a fork beat mixture well making sure no lump remain then add the raisins, next spread mixture into a prepared greased tin and then sprinkle on nutmeg.

 

put in oven electric 180c gas mark 4 cooking time 1 hour 15 minutes.

 

take out of oven and sprinkle some sugar over the top.

We used to call them Brownies as kids my Dad used to make cracking stuff.

 

My mums cooking was **** ;)

 

Then i learned to cook from my dad and now my son loves MY cooking Ho hum ;)

 

Last time i Made Cantonese chicken i used pigeon breast instead and he ate every last scrap on his plate ;)

 

Tonight i made Kebabs

 

Well i had to ring to order them thats working in the kitchen as thats where the phone is ;)

My Mum Used to make another type of bread pudding when i was a kid,

It was made mainly on a Sunday using the dry bread from the week b4.

It was broken down into a fine crumb using a blender (by hand by my Dad b4 the new blender came along)then this was mixed with eggs some milk and the main ingrdient was suet.

It wa part of our main Sunday lunch with Roast Gravy ect

 

I can't remember the exact weights and ingredients but i do remember it was delicious.

 

 

PS I wonder if anyone has the recipe
