So I thought I'd like to have a go this season at mincing some mallard and goose meat to try to come up with my own concoction. Has anyone done this before and can you recommend any recipes? sky gipsy Posted August 11, 2011 Report Share Posted August 11, 2011 Hi There is no reason why you cann't use minced waterfowl. We use the mince for "fowlers pie" (like shepherds or cottage pie), sausages & sausage rolls, kofta curries & keebabs etc...etc... You will need to add fat to the mince for sausages etc as the meat is so lean. We use pork back fat (available free from good friendly butchers or at a price from others (Try 2 part lean meat to 1 part fat). Our duck, garlic & chille sausage rolls go down a storm on shoot days. Cheers All you need is to mince whatever meat you have together (even Canada goose and shoveller taste good) with half that amount of pork mince and add some ready made burger mix.
