I think I posted the recipe last year - try a search - but if not I'll try and out it up later. Our apples are eaters (John O'something I think) and they ripen very early. I use less sugar than normal and use cimun and chilli powder. This years I've made spicier and I think it will go really well with things like goats cheese and mature cheddar.
