What is the reason for the high regard given to pheasants?

That's precisely what they are. Introduced to Europe from the Far East by the Romans as domestic fowl for meat and eggs and exported around the empire. The eggs, in fact, are some of the best you can eat in my opinion.

 

 

they are easy to rear, and can be driven over paying guns,

 

they taste pretty good too.

 

 

Not so sure, personally, about the taste of the meat. Especially the cock birds. Sooner eat a pigeon. I keep meaning to napper shoot a cock pheasant with the rifle to see if they taste better for not being pumped full of adrenalin when they're killed.

 

Still a good driven day brightens up the winter no end and is damn good fun when its well run and the guns aren't up their own bottoms.
