ThePestControllers Posted October 4, 2013 Report Share Posted October 4, 2013 Hello Folks do any of you can your food you shoot or catch. i have started canning the pigeon i shoot and its a very good way of preserving instead of waisting. and it makes a great meal. you can use it in pies as a filling or just warm it up and have it with mash and veg. the recipes must be endless. i am still experimenting with different flavours. so far i have used olive oil red wine chicken stock cube mixed herbs pepper and garlic. i just mix all the ingredients together blitz in a blender and pour over the pigeon marinade over night then put the marinaded pigeon into jars including the marinade 1" below top of jars then put lids on put in a pressure cooker for 1 hour 15 mins let cool and job done. i am trying to come up with a steak pie filling type of flavour if you have any ideas please. because the pigeon when canned is very similar to tinned beef. ThePestControllers Posted October 6, 2013 Author Report Share Posted October 6, 2013 years apparently in america its a big deal everyone does it. we used to do it over here but its not very popular now because of the easy food supply and supermarkets but in hunting terms its a great way of saving the food we shoot or collect. it can be use for sea food as well. so its great for foraging and gluts when at certain times of year when we get over run by abundance. i just find it difficult to get the taste right or should i say getting enough flavour into the jars i dont want to over salt. so i am trying out new recipes all the time Cheers Daz Quote Link to comment Share on other sites More sharing options...
