Thunderbird
Manchego is awesome. I love sheep's cheese. I was watching that tudor farm garden programme the other day and this woman was making cheese and it didn't look too hard. Seems Lakeland sell the basic kit too. Blunderbuss
I've never tried doing it, but I've got an old self sufficiency book somewhere which has a section on cheese making. And beer making, bread making, home slaughter and loads of other interest stuff. You're welcome to borrow it if you want, and if I can find it!
