Lord Geordie Posted January 15, 2016 Report Share Posted January 15, 2016 (edited) This is a spicy twist for the winter, and can be served with any game! Duck, Pheasant, Rabbit, you get the point! You can have it as a spicy pasta either. The Sauce, your going to need the following! Olive Oil 1 garlic clove thinly sliced 1 medium heat chilli pepper (red) thinly sliced 1 medium size onion 1/2 tin of sweetcorn 250g cherry or baby plum tomatoes sliced in half 1 tablespoon of balsamic vinegar 1 heaped teaspoon of brown sugar salt and pepper Drizzle oil into a good size frying pan and heat to just over medium heat! You want the content to sizzle, but not burn. Add sliced Garlic and Chilli, cook for 30 seconds, then add the onion! Cook the onion until it softens, then add the tomatoes, and cook for 3 mins until they start to break down. Add the sweetcorn and continue to cook for a further 5 mins. Add the Balsamic vinegar and brown sugar and stir through well. Simmer until the mix starts to thicken. Add Salt and Pepper to taste! If your not too keen on lots of heat, Adjust your chilli amount, Start with half the chilli and if not hot enough add more until you find your taste! Heat through for 2 mins and serve! This makes an excellent side salad for ANY meat, infact it's nice with fish too! It can be used as a Pasta sauce also! Martin. The phone camera is absolute tosh for true colours. Even adds feet for some reason? I don't even OWN feet? So I have no idea where they came from!
