And how many of you cooked your pigeon with the skin still on the breast as i do this with duck but have never done so with pigeon. Fse10. If it smells unappetisingly ripe, you may prefer not to eat it, or give it a long slow cooking to even out the gaminess (loads of red wine, thyme and fresh bay). Plucking the breast to keep the skin isn't too bad a job if you can be bothered, but, to appreciate the skin, I would suggest you roast or pan-fry it fast (and serve it pink in the middle).
