hawkfanz Posted May 16, 2016 Report Share Posted May 16, 2016 ok guys looking for ideas made some pigeon burgers for first time and while they tasted very good had problems wth the meat its was very sticky too much moisture but once in the pan they cooked good,,,so question what do you recomend to make the meat dryer and less sticky so i can get it off the board and wrapped for freezer,,etc Quote Link to comment Share on other sites More sharing options...
ElvisThePelvis Posted May 16, 2016 Report Share Posted May 16, 2016 (edited) I used raw beetroot with pigeon at the weekend to make burgers, seemed to work well and solved the issue you mention, unusual flavour which I liked but others thought the flavour was too strong.
