A Video request (De-breasting pigeons, the easy way)

I used to go about this the long way, but now instead of gutting it first, then de-breasting it, i simply pluck the breast feathers away, then split open the skin over the breast bone sliding out both breasts.

 

Is there a way of removing the breast bone with the meat still intact as a whole? would love a video of how to do the above if anybody has a spare pigeon and a video camera :good:

Key is getting the wings off as close to the body as poss.

 

Then left hand pigeon on its back, breast facing you. Right hand palm down, curl first finger back and pinch middle of breast between thumb and first finger.

 

Rip that up and over. If you do it, the only good shot in the video is the V shape you get of the two breasts on the bone.

 

Pigeon as before, right thumb down the V, left thumb so that you have both thumbs in there, with thumbnails opposing each other.

 

PULL, very hard and lever apart. Once the left hand falls away grab the pointy end of the crown with the right hand and lever out of the skin.

 

It is easy once you've seen one properly.
