Good morning to you all,

For all you pigeon eating enthusiasts. Have you tried pigeon as carpacchio. Thin raw slices drizzled with seasoned olive oil and good salt. i.e maldon sea salt flakes. Or lightly cured and then sliced very thinly. If so what results have you had?
