Thin raw slices drizzled with seasoned olive oil and good salt. i.e maldon sea salt flakes. Or lightly cured and then sliced very thinly. If so what results have you had? henry d Posted August 25, 2007 Report Share Posted August 25, 2007 If I was to give it a try, I would have to remove the upper side of the breast as there is always a chance of contamination from the loose feathers whilst skinning/boning out.
