Axe Posted September 4, 2007 Report Share Posted September 4, 2007 This is my version of what we (the family) refer to as Spansih Potatoes. It goes incredibly well with all manor off meals particularly Red Meat and Fish. Serves 2 6-8 Charlotte Potatoes 1 Red Onion 1 Red Pepper (I prefer Sweet Pointed) 4 Plum Tomatoes 2-4 Garlic Cloves 3 Inch Small Chorizo Sausage 1 tsp Smoked Paprika 1 tsp Turmeric 1 Tbl Balsamic Vinegar 2 Tbl Olive Oil Salt & Pepper Pre-heat oven to 170C Quarter the potatoes length ways and add to a roasting tray. Cutting the onion through the core each time, cut into 1/8ths,. remove the core and seeds from the pepper and cut into 8, add both to pan. Gently crush garlic under knife and add with skin to protect along with the Paprika, Turmeric, Balsamic Vinegar and Olive Oil, season to taste with Pepper and a little Salt. Massage flavours into the vegetables and place in oven for 40 mins. Slice chorizo into 1/4" slices and halve the tomatoes, place in the tray andturn the veg, place back in the oven for 20 mins. Remove from oven and toss veg in juices and serve. For a Naked Chef meal simply add 4 large lamb chops and a 2 courgettes sliced thickly, at the beggining.
