Preparing pigeons

I have a quick way of breasting pigeon but its a bit gruesome.

 

Firstly take a pair of garden clippers and cut the wings off close in to the body.

Then incert your thumbs into the crop/wishbone area.

Pull them apart in opposite directions and peel the breast bone away.

 

You end up with the breast bone and all the meat still in place.

The skin will peel away if you do it correctly so I normally wrap the breast in streaky bacon to keep it moist.

Best of all it takes less than 30 seconds!

This is the best and quickest way by far. :)

Certainly is. You do however create quite a mess with feathers - do as i do & prepare your game at your mother in laws! B)

I do mine in the garden and all the feathers blow into next doors garden who just happen to be anti's B)

Ummm turtle dove. :good: How much is a **** of safron anyway?

Have you had Turtle Dove?

 

Saffron is well expensive :lol:

 

My dad lives in turkey so i went over last year, i went to one of the markets and their was a spice stall, i've never seen so much saffron, i got a large sandwich bag PACKED FULL for about 70p i haggled him from about £2 i then did the same with pepper corns large bag again packed tight full of the stuff sold a bit to my mates at work! nice holiday as well! :good::D:lol:

No need for a knife OR trimmers to breast a pigeon!

 

Bend the wings back till they dislocate or break!

 

Wrench them off

 

Pull a small amount of feathers from the crop to expose the crop and just pinch the skin in your fingers and pull!!

 

This opens the crop then simply insert your 2 thumbs back to back down the gullet and prise the breast and neck apart push RIGHT down and twist the bottom of the breast till you eventually see the bottom of the breast exposed and just grab the bottom of the breast and pull up!

 

Done right this should bring the whole crown out skinned a VERY easy job!

 

I just breasted a few from last week I shot and ended up with over a KILO of breast fillets :blink:

Everyone has there own way of doing it, but this is how I do mind. Takes me about 30 seconds a bird

 

1. Hold pigeon by it's back, so breast is facing you and with other hand gently twist a wing upwards to dislocate

 

2. Spin the wing around a couple of times and then just pull off. Repeat this process on the other wing

 

3. Now you will be left with a neatly dewinged bird that has NO razor sharp bones to cut your hands on

 

4. Then, again holding pigeon by back, with other hand force thumb into bird underneath the breast

 

5. gently pull breast upwards, supporting pigeon body with other hand and it will just peel off

 

6. With breast now in hand, just peel off the remaining skin with the feathers attached

 

7. Give it a quick run under the tap and you now have a bird ready for cooking
