Jonty
I made a duck ragu at the weekend which I've had to share because it was absolutely delicious and relatively easy to make. I just swapped the legs in the recipe for whole birds. I was dubious about the cinnamon but the flavours combined over a couple of hours were amazing. I did use more expensive Italian tinned tomatoes than the own brand ones I usually use, and i do honestly think that they really helped. I made an aubergine sauce for my veggie daughter and had a first attempt at focaccia, which, if I'm honest, tasted like it was a first attempt!! But if you've got some ducks in the freezer, this is honestly worth a try - I reckon it would be lovely with either lamb or something like shin beef too.
