Food colourants are fine if you pick the right one and in foods like Tandoori Chicken they are a must, again most wholesale outlets sell various colours and thickeners need be no more than cornflour. Soy Sauce, I only buy Kikkoman in 5ltr bottles as it's the best. Maybe I'm a little naive but when I buy from a takeaway I like to think that someone has taken time and skill to produce the food that I am buying rather than ordering it online then simply reheating it?
