Also a bit more sediment comes off them. I would tell you the quantities I use but they vary every year as I forget the previous amounts from the last year. Enjoy! Treat them the same way as sloes, defrost and ***** them before adding gin and (as stated before less Sugar), we find kilners the best containers, Shake every day for 3 months and then strain off the damsons. We use the damsons cooked after soaking to make ice cream. Both are out of this world, and together fabulous. If you can last, store the product for a couple of years for best effect, although it's still good after 5 months!!
