Old - Brown all over in a frying pan then braise in a liquid for 2hrs on gas 1/2(Don`t have a leccy cooker so lowest setting) Young - Gas 4(180 I think ?) wrapped with foil then remove foil and return for 10 mins to brown. If you have plucked it, try putting some softened butter mixed with thyme, crushed garlic and lemon zest, between the skin and breast meat.
