Chilli Jelly - not for the faint hearted

Warning, this is not for the faint hearted, I often leave out the sweet peppers so this is VERY hot!

 

4oz Chilli Peppers

6oz Sweet Peppers

If you want it to look pretty then use different colour chillies and peppers, if you want it very hot replace the sweet peppers with more chillies..... :lol:

2 1/2 lb jam sugar

24floz cider vinegar

 

Deseed chillies and peppers and finely chop them, the finer they are chopped the better they will suspend in the final product.

 

Remove as many seeds as possible as they will float to the top of the jelly if left.

 

Dissolve the sugar in the vinegar, add the chillies and peppers. Bring to a rolling boil for 10 mins, beware, at this stage have the windows open as it is pretty pungent!

 

Remove the pan from the heat and allow to cool, stir occasionally to make sure the chillies and peppers are evenly distributed.

 

As it starts to set spoon into sterilised jars, this should make about 7 times 8oz jars.

 

Leave to fully cool and mature for a month and then start to use…….

 

Use extreme caution, this can be very very hot but goes very well with cold meats and with the summer barbeque.

Jerry cheers for that - I have a glut of chillies and needed a good recipe.

 

Another nice one we like is chillie pasta

 

Slosh some good olive oil in a pan and gently sweat of 4 or 5 cloves of garlic and then add sliced chillies to taste, the more the hotter so it depends on your heat preferance.

 

Then roughly shop 4 or 5 decent tomatoes, add to the pan.

 

Cook over a low heat to soften the toms for about 5 mins and then add a tsp of a mature chutney and some roughly chopped sun dried tomatoes.

 

Leave on a low heat to cook through while you grate some parmesan cheese and cook some spagehetti.

 

Once the pasta is cooked pour the sauce over and enjoy, I like it fairly hot so used 2 or 3 chillies plus seeds.

Indeed, the seeds to my Thai Hot chillis are seriously flippin dangerous.

 

Apart from planting the seeds do you have any recipes which use chilli seeds?

 

I did try a chilli oil with the seeds but it went manky.

 

The seeds in with pickled onions works a treat though.

 

Oil is a tricky one unless you can hot bottle it, and it can be dangerous if you get it wrong.

 

No specific recipies for seeds as such, you could try making your own cayenne pepper powder though.

nice m8 ... will try um as bit of a chilli freak ..... by the way anyone want any chilli sauces etc then use the cornish chilli company.... good service and i can recommend the winter chilli sauce ( chilli with blackberry and port ) or the wild strawberry and chilli dessert sauce for ice cream hmmmmmmmm :rolleyes:
