It is not essential to hang game birds, but it will make the flesh taste stronger. However, I have shot ducks before breakfast and eaten them for dinner the same day, they were delicious. I would not hang game this time of year, its too warm. If you do, always ensure you have a good flow of air round the hanging birds and they are kept cool. I pluck all birds in to a large polythene sack OUTDOORS, you will be amazed at the amount of fluff/feathers there are close to the skin. Ducks and geese, when ready for the oven I put the bird(s) in a roasting dish with half an inch of boiling water in the bottom and a tablespoon of salt. I bake the bird(s) forabout 10 minutes basting frequently with the salt water. This removes any trace of a "fishy" taste. I use to only do this with birds shot after Christmas, but I have had a few muddy birds early in the season. No doubt there will be other opinions.
