Bar-b sauce / marinade for rabbit

I've got some beautiful joints off some three quarter grown bunnies, back legs and saddles. I tried to bar-b a couple brushing with oil and turning regularly, but they were as tough as the proverbial.

 

Any recipes for a marinade please? I've been told NOT to include alcohol in any marinade as this dries the meat even further. Any views / experience?

there is a BBQ marriande called "mama Sitas". its a ****** to get hold of, but usualy Thai or Phiiapino shops stock it about 80p per pack. throw 2 of these in a tub with the bunny bits, leave overnight. :yp:

Then throw the rabbit away and drink the marinade, yep, heard that one! :lol:

hi mate bar-b-qing rabbit is prob not the best idea, well not from raw, as rabbit is a very lean meat and so does not have much if any fat to help become tender and juicy.

The best way would be to cook the rabbit in a marinade very slowly in the oven to make the meat nice tender, then have the bar-b very hot and just finish the rabbit on it.

This should give u the best of both worlds, nice tender rabbit with a good bar-b-q taste.

Yep, I'm with this theory, you could of course try wrapping the rabbit in bacon , this works well with barbied fezzy breast.

Don't knock it 'till you have tried it, not reccommended if you are a smoker though, and being a scouser you may need a cherry and a little parasol in it. Also, if you suffer with wind, don't stand with your back to the fire.
