nickb
Its that easy even I can do this....... 3 weetabix (I just use Tescos value wheat biscuits) 200g dried mix fruit 200g soft brown sugar 1/2 pint of full fat milk 1 large egg 225g Self Raising Flour. Sprinkle of nutmeg Break up the weetabix and put em into a mixing bowl, along with the brown sugar and mixed fruit and nutmeg, mix thoughly, then add milk and mix again. Cover bowl and leave for a minimum of 5 hours to soak. Pre heat oven to gas mark 4 (180 degrees) Add the egg, sieve the flour into the bowl and mix it all thoughly. Put the mix into a 2lb loaf tin (line it or grease it lightly with a smidge of butter first) Cook for about 1 hours 10 mins Leave to cool for about 15 mins then remove from tin. Leave to cool completely. Eat! Top tip, its really nice toasted with a smidge of butter on
