I have recently aquired a hand mincer and ive got a couple of rabbits here sitting doing nowt in the freezer. Once defrosted (of course) what are the steps i need to take to make nice burgers. Sauer Posted May 17, 2009 Report Share Posted May 17, 2009 meat from half dozen rabbits or so minced ( i just use saddle and hind legs front half to fiddly for what you get ) bit o pork belly or diced minced bacon if you cant get pork belly ( bout 1/4 or 1/5 of bacon / belly to rabbit) some very finely diced onions ( or not if you dont like em ) bread crumbs or butchers rusk to use as binding agent thro all ingerdiants into a bowl and mix till you get a good consistency for the meat "holding" together then roll bit in your hand and put into burger press( takes practice till you just know right amount o meat to roll) then whack thru burger press (see link) voila bunny burgers fit for a king serioulsy under rated meat in my opinion http://www.sausage-maker.co.uk/products.php?catid=16 sauer Quote Link to comment Share on other sites More sharing options...
