Thai style curry

I have been working on this one......

 

250gm of your choice of meat (king prawns are great)

2 Tbsp red curry paste

2 Tbsp crunchy peanut butter

2-3 Tbsp of coconut milk (or use 2 of double cream or 4 of full fat milk)

1 Red pepper sliced

small pack of baby sweetcorn chopped

corriander/spring onions to garnish

Chilli oil or oil for frying

 

Heat the oil in a frying pan until hot and cook the pepper until the skin starts to blister, then add the meat and just brown it.

add the curry paste and peanut butter and lower the heat, then when the paste and butter are combined add the milk/cream.

Add the corn now and it will be a little crunchy, cook on for another 5 minutes and add the corriander and spring onions, stir and serve with noodles.
