This chilli recipe was a "gold" medal chilli in some chilli making contest from some chilli eating country ... Makes a good chilli though FIRE ROASTED HOT CHILI Ingredients 1 lb ground beef 1 lb ground pork 1 lb ground turkey 1 can red kidney beans (drained) 1 can pinto beans (drained) 2 cups diced onion 2 cups diced green pepper 1/2 cup roasted red peppers 2 cups tomato sauce 2 tbsp olive oil 1 tbsp kosher salt 2 tbsp sweet Hungarian paprika 2 tbsp ancho chili pepper 2 tbsp coarse ground chipotle 1 tbsp smoked habanero (to taste) 2 tbsp granulated garlic 4 tbsp cumin seed 1 tbsp fresh ground pepper (to taste) 1 tbsp coco powder 2 cups beef stock 2 oz of whiskey 4 tbsp fresh Italian parsley (chopped) Steps On medium heat in large pan Brown meat set a side, drain and reserve liquid Toast cumin seed in separate pan and allow to cool (grind in coffee mill) Add oil to original pan, sweat onions until translucent, add green peppers until soften, add 1/2 of parsley add 1/2 of the cumin. Assemble ingredients in slow cooker (or large Dutch oven) Remove fat from drippings and discard, add stock along with meat mixture, onion / peppers and remaining ingredients reserving the ground cumin, parsley and the whiskey. Allow to come to heat and simmer low for 4 hours. Add the remaining ingredients; continue to simmer for another 1/2 hour. MM Posted January 12, 2010 Report Share Posted January 12, 2010 far too much in there for my liking. heres mine. 1KG of LOW QUALITY minced beef. dont buy the good stuff, as it goes dry to the lack of fat in it. buy tescos own. 2 large onions, 1 red, 1 white. 3 peppers, 1 of each colour. about 1/2 pound of mushrooms 1/2 kg of fresh toms. 1 tin of chopped toms. 1 jar of cheapo chilli sauce. (this just adds volume if you have a load of people) 1 bag of fresh chillis (bird eye, pref for heat) 2 piece garlic 1 large tin of kidney beans 1 oxo paprika cumin 1/2 bottle of tabasco sauce. Right, fry the mince and add the oxo. chop the white onion, and bung that and the garlic (chopped, not crushed). now add the paprika and cumin (about 1/2 tablespoon of each) and cook out. next the chopped red onion, and the diced peppers. leave this for 5 mins. now add the chopped and tinned toms. quarter the mushrooms and ad these next so they stay soft in the toms. chuck the jar of chilli in, and add water to make the correct volume. the heat goes in last. half some of the chillies, and leave some whole. stick in half a bottle of tabasco, this makes sure all the sauce is the hot bit, not the meat and veg. leave on a low heat for 30 mins. let it cool overnight, as the sauce will thicken up.
