henry d Posted August 21, 2010 Report Share Posted August 21, 2010 250/350gm minced game (pigeon and hare are good) 2x 400gm tins of chopped tomatoes 1x tbsp tomato ketchup 4-5 dashes of Worcestershire sauce 2 big x pinches celery seed 1x tbsp Marmite 1-2 bay leaves 2 small-1 medium onion (sliced) 2x large cloves garlic crushed 2x Chipotle chillis FRESH Chillies – dependant on what heat you like (and whether you can get Chipotles) 1x red pepper – SMOKED - this is important to the final heat and taste! 1x 400gm can red kidney beans 2x tsp sugar 2x tsp dried oregano 1/3rd bar of 70% dark chocolate Oil In a saucepan heat the canned toms with the crushed bay leaf, oregano, sugar, Worcestershire & ketchup and add the chipotles to soak and soften. Add the celery seed & Marmite - EVEN IF YOU DON`T LIKE IT! In a frying pan soften the onion in some oil and halfway through add the fresh chilli and garlic. Add to the sauce and turn up the heat and BROWN the mince and add to the sauce and de-glaze the pan with some water. Add 2/3rd of the kidney beans and blitz/process the rest and then add (you may need to add some of the tomato sauce to the beans). Chop up the chipotles into the sauce, taste for seasoning and adjust and then if to your liking add the choccy. Leave to cool and eat the next day or two as it will improve. The chipotles and the smoked peppers make this along with the choccy, so don`t skimp. The marmite also makes a difference, but if you don`t like it you won`t taste it, so don`t miss it either.
